This may not be the most familiar vegetable to most of us, but it’s really worth a try! It tastes almost like a cross between a cabbage and an apple, and if you peel it and slice it up, it’s a great crunchy snack. Our you can do what our friend Shannon does every time a kohlrabi shows up in her CSA share: peel and slice the kohlrabi into 1/8 inch thick slices and use as a component in a sandwich (i.e. cheese, mayo, lettuce, tomato, mustard, and kohlrabi). It’s now our favorite way to eat it!
